Fish Tacos

Yield: Eight portions

Ingredients
2 lbs. catfish, cut into strips
8 6-inch corn tortillas
¼ cup white corn meal
¼ cup canola oil
½ tsp salt
¼ tsp pepper
¼ cup fresh cilantro, chopped
1 cup Tomato Salsa (recipe here)
1 cup lettuce, shredded

  1. Season the catfish strips and coat with cornmeal. Pan fry until done.
  2. Warm the tortillas. Place some of the cooked fish on each tortilla. Top with salsa and lettuce. Fold tortillas in half and serve.
