Fish Tacos
Fish tacos are a great lighter alternative to traditional beef or

6-inch corn tortillas |

white corn meal |
| ¼ cup |
canola oil |

fresh cilantro, chopped |

- Season the catfish strips and coat with cornmeal. Pan fry until done.
- Warm
the tortillas. Place some of the cooked fish on each tortilla. Top
with salsa and lettuce. Fold tortillas in half and serve.
