Tomato Salsa

Yield: Eight 3 oz. portions

Ingredients
1 lb tomatoes, medium dice
2 tsp fresh cilantro, chopped
2 1/2 tsp jalapeno pepper seeded, chopped
1 cup red onion, small diced
3 Tbsp lime juice
2 tsp kosher salt
1/2 tsp ground black pepper
  1. Mix all ingredients together and marinate for 20-30 minutes. Refrigerate leftovers for up to one week.
