Your lunch with Chef Kate was full of imagery. I could just see the greens, the big juicey leeks, and fresh dark red beets. Your braising part was very helpful. A chuck steak is  a good source of protein. Not expensive and not hard to find.

I can see the foods you prepared probably didn&#039;t take too much time to prepare because they are mostly roots. The leeks and beets have so much taste in them that it is not hard to bring that out with sauteing or boiling. I find it interesting that it is the roots that contain the valuable fibre the body needs to trap carcinogens from recirculaing into the body. Your choice of roots was very appropriate for that.
