I am a teacher in Denver, Colorado and am currently teaching a service learning class.  This year, my students have chosen to take on the school cafeteria for their project.  This has been an enlightening and very trying experience for all of us.  Who knew that food was so bureaucratic!  We are concentrating on the quality of the food and the portion sizes as well.  any advice would greatly be appreciated!

If you cannot cover the entire country I am more than happy to  change Colorado for you.  I am in my first school and meeting with the Boulder Valley School District next week.  The article about the Summit Lunch program that I currently run was one of the top 3 most emailed articles in the Boulder Daily Camera last month.
