I'd like to know how to support a tastier, more nutritious lunch program with the extreem budet limits we have. We live in one of the wealthiest towns in NH but and are told we can't afford more fresh fruit and vegetables. Can anyone give examples of how to achieve healthy affordable lunches without grant money?

The USDA allows French Fries / potatoes to count for a veg but we choose not to. As a manager/ chef you can work with the system and make it better on your own.

While I really agree with this article, I also see the real side of food services every day. I am a registered dietitian who works for a large school food service organization. What the article fails to mention is how much food service has changed and continues to change. I am proud of the changes we HAVE made in light of the bleak economy. While I agree that changes have to be made, the good news is the meals ARE changing. So, when articles are written, please do research and see how much change has been made, not only what isn't being done.

In the past three years we have offered chef salads as a second entree(the amount of salads being requested has increased!), we offer fresh fruit alongside juice or canned fruit, we offer two vegetables everyday at lunch, we do not offer french fries at the elementary level....I could go on and on. Yes, we offer chicken nuggets, but we also offer baked chicken. I think for everything, their has to be balance.

I enjoy your blog and like to see what is possible.

Thank you,
Erin

We are going to the Washoe County School Board (Reno, NV area) for a final vote for a pilot program in 2 weeks.
Our desire is to cook and serve fresh and local to our children. CAn you tell me if it is possible to get the Federal Funds transferred to our local Cater/private Chef that is going to do this Pilot. Who can I talk to that can explain to our CFO how to get these funds transferred. With Budget cuts, he said that he does not have the time to research it. We currently have Sudex-ho as our food SErvice Company.
We will will eventually go for the entire District next year.

WE love learning from you,let me know if you can help me with this last area that we need to solve.
Thank you so much
